So, I went on a gluten-free diet. I felt a little better at first… but then nothing. No real improvement. I was frustrated and needed to figure out a diet that actually worked.
Eventually, I developed an anti-inflammatory diet that resolved my gut and thyroid issues. My autoimmune antibodies went down to normal—and they’ve stayed that way for years.

Reason #1: Gluten-Free Diets Still Include Gluten-Like Grains
Many gluten-free diets include grains such as:
- Rice
- Corn
- Millet
- Oats
These contain gluten-like compounds that can still trigger inflammation.
Back then, my meals looked like this:
- Breakfast: Eggs and millet toast, or oatmeal, or rice cereal
- Lunch: Rice with vegetables
- Dinner: Gluten-free pasta
All those starches were feeding the pathogens I didn’t know I had—parasites, candida yeast, and bacterial overgrowth. This made my symptoms worse.
This is extremely common in patients I see.
Reason #2: Gluten Causes Leaky Gut — Leading to More Food Sensitivities
Gluten can cause leaky gut, which makes you sensitive to other foods.
I discovered I was sensitive to:
- Eggs
- Dairy
- Soy
- Legumes
- Other foods
So even though I cut out gluten, I was still eating foods that triggered inflammation—preventing me from getting better.
Reason #3: Gluten-Free Processed Foods Are Still Junk Foods
Many people switch to:
- Gluten-free crackers
- Gluten-free cookies
- Gluten-free breads
- Gluten-free cakes
These are often filled with:
- Seed oils
- Starches
- Additives
- Sugar
- Preservatives
These ingredients can worsen inflammation, gut issues, and autoimmune conditions.
Reason #4: Gluten Sensitivity Leads to Nutrient Deficiencies
Over time, gluten sensitivity and leaky gut can cause deficiencies in:
- Vitamin D
- Magnesium
- B vitamins
- Zinc
- Iron
- Selenium
If you don’t replace these nutrients, healing becomes much harder.
